A Sphinx is a creature which has the head of a woman, body of a lion, and wings. It is not a woman, but a beast, just as a centaur (half man, half horse), therefore it eating a human is not cannibalism. That being said, in Ancient Greek mythology, the Gods did, on a few occasions, eat other gods, usually having been tricked into doing so. Therefore, even if this was a woman, it would not have been absolutely far-fetched or it to eat another human.

A Sphinx is not a human, but a carnivorous beast with the body of a lion, but the face of a woman. She has very sharp teeth.

The Sphinx of the of Greek myth (aka the Gyno-sphinx) was one of the beastly children of monsters Typhon and Echidna. Her siblings included the hydra, the chimera, Cerberus, the Nemean lion and the Ladon (the sleeping, multi-headed dragon that encircled the golden apple tree in the garden of the Hesperides. Can you imagine dinner time in that household? Our massive friend in Egypt is the Andro-sphinx and his his background is the subject of some conjecture as to his mythos and even the purpose of the edifice. I've read one theory that says the Egyptian sphinx was not so much to be viewed as a monster... but as an homage to a pharoah by placing his visage on a powerful beast symbol.
